Our Bourbon starts with certified organic, non GMO corn By law Bourbon has to have a mash bill of at least 51% corn. We use yellow, white, blue or red corn. Our corn is always California-grown, certified organic and non GMO and as sourced as close as our distillery as possible. To round out our Bourbon mash bills we use locally grown wheat, rye and/or triticale. Every batch of Boldt Bourbon is a single barrel. Our Bourbons are aged a minimum of 2 years in brand new, charred barrels..

BOLDT CEREAL KILLER
Our Cereal Killer varietals include 100% Wheat, 100% Rye and 100% Triticale (a wheat/rye hybrid). As always grains are sourced as locally as possible.
Each single grain whiskey has a distinctive flavor profile. You can purchase each varietal individually but we also sell all three bottles as a “Trifecta” for a discounted price. It’s a fun and easy way to host your own tasting flight!
Boldt Cereal Killer are straight Whiskies aged for a minimum of 2 years in full sized 60 gallon charred barrels.BOLDT GENEVER STYLE GIN
Traditional Gins start with a neutral Vodka base. A Dutch style or Genever style Gin starts with a grain base that is not neutral. Rather the grain flavor carries through to the finished product.
Our grain base is hard red wheat. We do not want to strip this freshly milled grain flavor… rather we allow it to costar with the botanicals.
Genever style Gin is often referred to as a Whiskey-lovers Gin so we decided we would barrel age it!
Our botanical blend includes the traditional flavors of Juniper and Star Anise as well as some unique, local flavors such as fresh redwood needle tips..
LOS BAGELS WHISKEY
We are so excited about our collaboration with Los Bagels! We have successfully made Whiskey using their organic, day old bagels. Talk about creative re-use! And 100% of the spent mash goes to local pigs. Thanks to A Nutter Production for the video and The historic Minor Theatre for airing this video as part of their “Community Spotlight” series. Los Bagels Whiskey is a distillery-only release. Our first barrel was released and sold out in December 2019. The next and final barrel will age for 4 years with a release date of Spring 2024...
BOLDT CLEAR WHISKEY
Did you know all spirits come off the still clear as water? It is true… even when we distill red or blue corn!
It is the barrel aging process that gives whiskey it’s amber color. Clear, unaged spirits put into a barrel interact with the charred barrel wood which greatly influences the color, smell and taste of the finished product.
In the beginning we didn’t have any aged Whiskey and were not interested in “sourced whiskey” that we would purchase in bulk and put our label on. We made the decision to debut Boldt Clear Whiskey as our first spirit while waiting for our barrels to come of age.
Each bottle is filled with a single grain, locally grown and freshly milled just before cooking. The spirit then briefly touches oak (a legal requirement) before going straight to the bottle.
We discontinued this unaged Whiskey multiple times but customers complained so we brought it back!
Many bars/restaurants choose to highlight this spirit as a mixer in cocktails although many also love it straight!
BOTTLED IN BOND CORN WHISKEY
This mash bill is 100% corn- 33.3% (of each) red, white and blue corns. It was aged in an ex Rye Cereal Killer barrel for 4+ years. This whiskey was awarded 91.5% by Jim Murray's Whiskey Bible which translates to "brilliant" in his scoring guide.
BARRELED MANHATTAN
Our Barreled Manhattan is a ready-to-drink cocktail of Boldt Bourbon, Candy Cap Bitters from Alley 6 Craft Distillery and Vya Sweet Vermouth from Quady Winery. This cocktail is aged in an ex- Boldt Bourbon barrel for 5 months.
BOTTLED IN BOND RYE WHISKEY
This mash bill was 100% organic Gazelle rye. It was grown by Lisa and Laurence Hindley in Honeydew, CA just 80 miles from our distillery. It was aged for 4 years in a brand new barrel with char #3. This whiskey recently won Best of Class in the Sunset Magazine International Spirits Competition.
